Tips for Icing

• Try wrapping cooked, cooled cakes in plastic wrap and freeze for 1 hour before icing. This helps set the cake so crumbs won’t get caught in the icing.
• Cut cakes horizontally in half, using a serrated knife. It’s easier to halve cakes when they’re partially frozen. Use the knife to make marks around the edge before starting to cut.
• Start by icing the top. Dollop icing in centre of cake, then use a Icing knife to spread icing outwards into a thin, even layer. Leave excess icing around edge to ice the sides.
• Spread icing from top edge down the sides of the cake, adding more icing when needed.
• For a smooth finish, dip palette knife in boiling water and wipe dry. Run hot knife over icing in long strokes.
• If making buttercream ahead, you can store at room temperature for up to one day.
